Wax Myrtle | 2021-2022

Provided creative direction for the cocktail program at Wax Myrtle, the Land and Sea Dept. restaurant located on the Thompson Hotel rooftop in Austin, Texas.

Created cocktail menu concept, all training and public relations assets, selected glassware, determined garnish, and handled cocktail styling for photoshoots. Provided mentorship for on-site bar manager and supervised training for opening staff.

Following the culinary creative lead of Wax Myrtle’s executive chef, this cocktail menu leans into the idea of Tex-Med*: grounded in the classic cocktail cannon, a lineup of mostly American and Mexican spirits is complemented by European sherry, vermouth, brandy, and amaro.

*Tex-Mex, but Mediterranean, too!
